The Gravity of Wine

Decantos Vinícola in the Valle de Guadalupe is a newer winery, but one to be contended with nonetheless. After learning the ins-and-outs of winemaking in La Rioja, Spain, winery owner Alonso Granados brought this knowledge back to Ensenada (where he was born) and created an exceptional gravity-flow winery. Never heard of the technique? Read on to learn.

Opening in August 2015, Granados and his family have been making wine since their first harvest in 2013. The name of the winery, Decantos, is because they are a gravity-flow winery, meaning they use gravity during the entire process from grape to bottle. This means that they decant the wine from tank to tank without every using pumps. This leaves the wine with a more fruity and well-rounded flavor.

Granados idea for the winery is the make all grape varietals in the Valle de Guadalupe region - there are over 40 different ones. With three different valleys in Valle, the microclimate allows for these grapes to be grown. Due to this fact, the winery tends not to produce blends, but rather focus on the pure grape varietal that is grown in the specific valley.

With these valleys also comes varieties in the taste of the wine. You can expect rounder wines with a higher alcohol percentage because it gets really hot during the summer and during the harvest. The wines also tend to be exceptionally colorful and full-bodied.

Decantos wine can only be found (as of right now) in Mexico and Spain. They are hoping to expand into California to meet the demands of wine-lovers throughout the state, but until that time comes, luckily Valle de Guadalupe is located less than 2-hours south of the border.
